Bolla are similar to flat breads and focaccia but are more airy with a crisp under crust. "Bolla" means bubbles in Italian and refers to the ancient Roman technique of creating the 48 hour dough. Very little yeast is used, and just a few ingredients: filtered water, 00 flour, salt, yeast, olive oil.
Bolla are par-baked and frozen, ready for you to bake off a fabulous creation in just 6-10 minutes! (Rosemary and olive oil not included, add $2 for Chef Ollie to prepare your Bolla and have ready for you in a to-go box). You can freeze Bolla up to one year, or keep in the fridge for one week (no preservatives) - most won't last a day because they are delicious!
To prepare at home: preheat your oven to 425 convention bake or bake. Kits include semolina dusting powder and finishing salt. Line a baking sheet with foil or parchment (easier to clean and prevents sticking) and sprinkle the semolina flour. This will add crispiness and texture and prevent sticking. Top your Bolla as you please, remember soemtimes less is more and you want to avoid overloading with sauce and toppings and making it soggy. Bake for 6-10 minutes or until Bolla is golden brown to your liking and cheese or other toppings are done. Add finishing salt and fresh herbs after baking. Reach out if you have any questions!
